Chunky Chicken Vegetable Soup
(off good seasoning Italian dressing box)

Cut into bite size pieces 1/2 # boneless-skinless

chicken breasts (2-3 pieces)
In a large saucepan, cook and stir the chicken
in 1 teas. hot oil until no longer pink or
cooked through
1 (14 oz.)can chicken broth
1-1/2 cups water
2 cups assorted cut-up vegetables, such as
sliced carrots
broccoli florets
chopped peppers
1 envelope Good Seasoning Italian
Salad dressing

Reduce heat to low, cover, simmer 5 min.
Stir in:
1/2 cup instant white rice, uncooked
2 Tbsp. chopped fresh parsley
Remove from heat
Let stand 5 min.
